Fresh Pesto

Perhaps it was the hint of warmth that we've been experiencing in NYC lately but the other day I found myself craving some good old fashioned pasta and pesto. If you need a delicious meal on a budget, make yourself some homemade pesto and throw it on....literally whatever! I made this twice this week, first time I put it on BANZA Cauliflower Pasta (Honestly the best cauliflower pasta brand) and the second I put it on some fresh Parpadelle from my new grocery delivery obsession Farm to People and added some shrimp. However you use it, this pesto will give you flavors and satisfaction. And it's quick and easy!


INGREDIENTS- 2 servings

2 Cups Fresh Basil, chopped

1/2 Cup Olive Oil

1/4 cup Walnuts, chopped (you can also use pine nuts, almonds or pepitas)

1 Clove of Garlic, peeled

1/4 cup fresh grated parmesean

Juice of one lemon

Salt and pepper to taste


Toss everything in a high powered blender or food processor, turn that shit on and voila! Use it as a sauce in your favorite pasta or on top of fish, chicken or even steak!
