Flavorful as F*ck Greek Salad

I was inspired to make this delicious salad by what else, Selling Sunset! The newest season is now up on Netflix (not a plug, just a fan) and it kicks off with a lavish vacation in Greece. I love everything about Greek food and because I'm easily influenced, I decided I had to make a greek salad IMMEDIATELY. I got into my zone, layered some flavors and the end result was incredibly delicious and filling. The best part about a salad like this is you can really make it to your taste. Add more or less of whatever and enjoy! Note: this recipe made enough for two large dinner salads. This salad really can be made to your liking hence my mostly "handful" measurements. There's no right or wrong, eye it and make it to fit your taste.

INGREDIENTS

FOR THE SALAD

One head of Organic Romaine Lettuce, rinsed and ripped into pieces

1 Small Red Onion, sliced

2 Lemons, juiced

1 Cucumber, Diced

1 Large Handful of Cherry Tomatoes, sliced lengthwise

1 Handful of Pitted Greek Kalamata Olives, chopped

1 Large Handful of Chickpeas

Sliced or Crumbled Feta Cheese (I used 8 slices)

FOR THE DRESSING

1/2 Cup Extra Virgin Olive Oil

2 Tsp Dijon Mustard

2 Tsp Red Wine Vinegar

1 Tsp Dried Oregano

1-2 Garlic Cloves, crushed (depending on how garlicky you like it)

Salt and Pepper to taste

Start by juicing your two lemons into a bowl. Add in the sliced red onion. Letting the onions soak in the lemon juice takes out some of the intense bite of the red onion. Next, toss your sliced tomatoes into a small bowl, drizzle with a little bit of olive oil and season with a little salt and a little dried oregano, give it a quick mix. Let the bowl of tomatoes and bowl of onions marinate while you prep the rest of your ingredients and make your dressing.

For the dressing. Start by adding the dijon and red wine vinegar to a small bowl. Whisk until its combined and velvety (maybe 30 secs). Add in your olive oil and whisk again for another minute or so to combine. Next add in the oregano, garlic, salt, and pepper and whisk one more time to combine all the ingredients. Set aside

Once the rest of your salad ingredients are sliced, diced and chopped, assemble your salad. In a large bowl add your romaine lettuce and top with the cucumbers, onion (drained from the lemon juice), tomatoes (drained from olive oil mixture), olives, chickpeas, and feta. Drizzle with dressing and sprinkle with a little extra oregano! Enjoy!
